It appears wherever I look individuals are scrambling to check things off their vacation records, line up to pay some place, take the following flight home, or get their home prepared for the greatest occasion of the year. I need to concede; I used to savor the shopping center amid Christmas time. I would now be able to share that I'll evade it in the event that I can. I've been to the shopping center twice this Fall, the multiple times in November. Not certain if it's the series of groups or the humming background noise maybe both.

Be that as it may, what gets me siphoned and truly energized is the joy that accompanies Christmas morning. As far back as Ethan and Gracie came into my life; that is the best piece of my Christmas. To hear them wake up (and after that wake me up with shocks and not all that delicate pushes and tickles) asking to go first floor and mind the plunder left by Santa. Fretfully energized, little hearts flooding with huge desires.

Ingredients

  • 2/3 cup coconut flour (this measurement only works for coconut flour)
  • 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • pinch of sea salt
  • 1/4 tsp of cardamom
  • 1/4 tsp of cinnammon
  • 1/3 cup of raw honey  (OR 1/2 cup of raw honey if you like it sweeter)
  • 6 large eggs (always at room temperature)
  • 1/3 cup of melted coconut oil
  • 1/2 tablespoon pure vanilla extract
  • 1/2 cup of freshly squeezed orange juice
  • the grated zest of one orange (it really elevates the flavor!)
  • 1 cup of fresh cranberries
  • Optional Ingredients:
  • A splash of rum or brandy (about 1 tablespoon)
  • You could add chopped walnuts
  • You could sprinkle dry old-fashioned rolled oats so it bakes with a nice little topping. note: adding oats will no longer make it paleo.
  • Golden raisins or raisins also go nicely with this bread
  • If you don’t have cranberries, mulberries are a great option!

Instructions

  1. Preheat your oven to 350F & line a large loaf pan with parchment paper
  2. In a large bowl, combine all the dry ingredients together and give them a good whisk.
  3. On a smaller bowl, combine the wet ingredients together and mix well. Integrate wet mix into the dry ingredient bowl.
  4. Fold in the cranberries & the orange zest
  5. Pour batter into the loaf pan, use a spatula to even out the top surface. I like to sprinkle a few cranberries directly on top. They will warm up, pop in the oven & make for a beautiful loaf. Your house will also smell wonderful!
  6. If you got walnuts or raisins, you could also sprinkle them on top or fold them into the batter.
  7. Bake for about 45-50 mins or until center is cooked through. Insert a toothpick or knife into the center of the loaf to check for doneness.
