Experiencing childhood in my community there was a neighborhood lady who made those flavorful no prepare oats nutty spread treats that everybody knows and cherishes. She had a rich chocolate form and a heavenly nutty spread rendition.

Neighborhood cafés and shops, just as the secondary school sold them. My bad habit was the soften in your mouth nutty spread form and Mr. Maebell's was consistently the chocolate. Tragically, as a low carb gluten free family those dearest Dotta Sue treats simply aren't a choice any longer. These Keto No Bake Cookies are a low carb turn on my preferred youth treat.

To be reasonable, these are not a counterpart for a genuine exemplary no heat nutty spread treat. How might it be? Without customary sugar and oats it would be unthinkable. In any case, taking into account that these just have around one net carb per treat they are a really astounding substitute!

Ingredients

  • 3/4 cup coconut oil
  • 3/4 cup creamy low carb peanut butter or almond butter
  • 1/4 cup cocoa powder
  • 1 cup swerve sweetener (brown sugar or granular)
  • 1 teaspoon vanilla extract (optional)
  • 1 1/2 cup UNSWEETENED coconut flakes
  • 2 tablespoons hulled hemp seeds, also called hemp hearts (you can use an extra 2 tablespoons of coconut flakes if you don't have this. I like the mixed texture and it adds a bit of fiber)
  • sea salt for topping (optional)

Instructions

  1. In a medium size sauce pan combine the coconut oil and the peanut butter over medium low heat.
  2. As the mixture begins to melt stir until well combined.
  3. Stir in the cocoa powder, vanilla (if using) and the sweetener.
  4. Increase heat to medium or just over medium and slowly bring the mixture to a simmer.
  5. When the mixture is simmering and the sweetener has completely melted (your fudge mixture should be smooth with no visible granulars) remove from heat and stir in the coconut flakes and the hemp seeds.
  6. Set aside and allow mixture to cool slightly.
  7. Carefully spoon into silicone mini muffin tins.
  8. Sprinkle with sea salt if desired.
  9. Freeze for 15 minutes until set. Remove from tins and store in an air tight container in the freezer.
